How do I remove the aluminum GT500 plate above the glove box? If i remove will it affect the air bag?

That plate is commonly referred to as an airbag cover which is attached to the passenger side airbag. You'll need to remove the complete airbag assembly as once its been removed you'll then be able to seperate the cover from the actual airbag.

 

There are a few threads here on Team Shelby discussing the "how to" instructions for removing the airbag.
