Watch the roast temperature though, once you reach 170°, it's dinner time.

Great. Thank her for me! I've got a 3.5lber. I wanted to do something different for my girls. Christine's got a lousy headache today.

 

Smelling a roast in the oven will help her feel better! A couple of big Idaho's and fresh green beans will put a smile on her face! :happy feet:

 

I'll put some meat rub on it from KCMO!

I always use a thermometer. Only safe way. Too many variables to do the old "x minutes/lb" method for me... depends on shape, how much fat etc.

I agree. I just wanted the minutes per pound to get a Ruf idea on when to start the veggie and taters!
